Grown by Edwin Enrique Noreña on the Campo Hermoso farm in Quindio, Colombia, this single origin is just a spectacular GEM of a coffee.
Edwin is not only a third-generation coffee producer, he is so much more... a university-trained agronomist, an instructor in one of Colombia’s largest agricultural training schools, an international coffee processing consultant, a licensed Q Grader, a leader in experimental fermentation techniques, and a highly sought-after judge on the Cup of Excellence circuit.
Simply put, Edwin is a highly aspirational coffee producer who focuses on cultivating very specific varieties paired with very specific processing methods designed to express the most surprising, memorable, and delicious coffees possible within his resources. He is constantly on the absolute cutting edge of coffee production, creating trends that will be commonplace in 3-5 years.
He subjects this Sidra to one of his least intensive protocols in order to really let the variety shine. The first stage consists of a 56 hour low-oxygen phase in cherry. After removing the cherry skin, the sticky parchment is then fermented dry (without the addition of water) for 48 hours, and afterwards immediately moved to a combination of patio and raised screen beds to dry in the full sun.
This process allows the florality to take center stage, with delicate notes of lemon zest, vanilla, pine and tropical fruit juice. This is a big, exotic, fruity coffee.
